Instructions

  1. Prepare the Batter:

    • In a large mixing bowl, combine the ragi flour, whole wheat flour (if using), baking powder, sugar, and a pinch of salt. Whisk together to mix evenly.
    • In another bowl, whisk together the milk, egg (if using), vanilla extract, and melted butter or oil.
    • Add the wet ingredients to the dry ingredients and mix until just combined. If you're using mashed banana, fold it into the batter. The batter should be smooth and slightly thick. If it's too thick, add a little more milk to reach the desired consistency.
  2. Cook the Pancakes:
